Cortijo Los Aguilares is a unique and pioneering winery located high in the mountains of Andalucia close to the town of Ronda. It has an ancient history dating back over 100 years to the period of Moorish Spain. In addition, also Roman remains have been found around the property. The current owners bought the estate in 1999 and began to plant vineyards. Since that moment a rigorous policy of integrated viticulture has been followed, showing the maximum respect for the environment. They seek to achieve a product recognized for its uniqueness and quality, and spare no means to do so.
El Cortijo Los Aguilares is located over 900 meters above sea level. It consists of 800 ha. Of which only 18 are devoted to the cultivation of the vine. The rest is mostly oak and scrub, where the Iberian pig is raised. It is the high altitude of their vineyards that allows Pinot Noir to thrive. The long growing season and cool temperatures produce fully developed, ripe grapes that enable them to produce wines with complex flavours and pleasing structure.
The ageing takes place in a subterranean gallery, located under an artificial pond which keeps the temperature and humidity, maintaining it through the year. The barrels are exclusively fine-grained French oak, and are used only 3 years. The rigor and affection with the vineyard is treated, is reflected in the wine, making it one of the most outstanding wineries in Serrania de Ronda region, Malaga. Besides, it is also one of the most international wineries in the area and has also received great recognition for the quality and originality of their wines.
